TBB: Coconut Cupcakes with Milk Chocolate Ganache



I started off 2016 with root canal.. boy was it painful! Then I was down with flu in between the treatments.. and now that I've recovered, I am still feeling super tired despite taking iron supplements daily.  Some days I feel like I need to sleep all day, yet some days I feel so energetic.  Perhaps it is due to hormones imbalance playing wreck on my body...  like roller coaster!   This morning, I was so tired, that I couldn't even find the strength to answer my husband when he asked me a question. I didn't purposely ignore him, but I too tired to say a word.  Also who was that stupid person who called our home phone line at 2am looking for someone else?! 

So you see, it took a lot of effort for me to write this post this morning.. lol!  (actually I felt better after I took 2 Lindt chocolate truffles this morning.. maybe I just needed some sugar!)

No one in my family likes coconut in cakes, so I was half-hearted making these cupcakes. 

I tried to make the cupcakes less coconut-y by adding pandan paste .. and my cupcakes ended up green.. not because I'm celebrating St. Patrick's Day early. Also I reduced sugar by 1/4 cup.

I didn't make the ganache. I made the coconut custard cream and stopped at that.  I tripled up the coconut cream.. or was it triple x 3?  And piped the cream as frosting instead.

 All packed for Church the next day. 
I had to line with paper towel to absorb condensation that will happen when store in the fridge.

As a baker,  I feel it is important to taste my own bakes.


I really like the coconut custard pairing with the cupcakes. 
The cold custard with the cake lightens overall texture..not too sweet and also not too coconut-y either.  
Really good.

Been too lazy to blog but I did bake lots..although some are not documented.  Lately I would just post the photos onto my own FB account so that I have an idea what I have baked.  However,  recently I had to refer back to this blog to check my older postings because I can't recall.

ABC - Emergency Blender Cupcakes


ABC - Emergency Blender Cupcakes (page 72, The Weekend Baker) 

I made these cupcakes really early, but somehow got caught up with work and forgot to upload photos from my camera and post this early. :p  

I made 6 batches of these and baked into mini cupcake cases.

Not quite sure if the 'damage' was done by the blender blade or not while scraping the sides of the blender
i was worried that the missing piece might be in the mixture!

So, i strained the mixture and found nothing. I was so relieved..because i found nothing. :) So the spatula has already been damaged earlier just that I have not noticed it earlier. 

The cupcakes were so easy to make and they were delicious as well!  However, i made changes to the chocolate frosting, because no matter how long i waited, it never hardened as it said it would in the book, so i figured it must be because of our hotter weather. So i tweaked it until it could actually hold it's shape and can be piped and yet looked so glossy. One of the best frosting i have made...not is it glossy, it stayed so well and stable in our room temperature, it is so chocolatey too!  Not sure if i can repeat this though..hahahaha.. since i just eyeballed everything and threw in whatever i had that i thought could work. LOL! 




Verdict:  Best chocolate cupcakes i've made. Not only is it very chocolately, it is very moist, dense and tender crumbs.

Star Wars Cake, Cupcakes & Cookies

These are what i have been so busy with. My friend Angela (Sweet-Tooth-Fairy) asked me to take on her client in her absence and she "pushed" me to accept it...knowing that i need to stop watching too much TV and get some work done. LOL!

These are my diy cupcake wrappers in case you all are wondering..:) 
I downloaded a file on papercraft from a Japanese website and edited them in photoshop and adjusted to the size that i wanted for my cupcakes.  


STAR WARS  CHARACTER COOKIES

Star Wars character cookies. 
These cookies are harder to ice than i thought! I had a hard time trying to ice them esp. Boba Fett..took me a really long time that i almost tear my hair out..lol!

Many thanks to Angie (another friend name Angela..lol!) who carried the cutters all the way back from US.

Now i'm taking a break from baking...and a break from Star Wars...

Even though i didn't join HCB this week for the Genoise Tres Cafe, i did bake part of the cake and cupcakes from HCB recipes.  For cupcakes, i had to experiment & weigh the batter to the exact grams a bit to get a dome..and realised that flour (cake or all purpose) makes a difference to the texture and the density of the cake and the shape as well!

The only thing that didn't work from Rose's recipe was the pastillage taken from Cake Bible.   Not sure why but i made it twice and it was too wet, and i add lots of icing sugar before it even become a dough and it became crumbly later so i had to discard.
